Breakfast time at Azul is all about deliciously healthy homemade food and happy smiling faces around the breakfast table. Jo’s fabulous homemade marmalades make such a delicious topping for your bread or sweetener in your porridge and they are so simple to make at home. Here she shares with us the recipe for her apple, date and cinnamon marmalade. Enjoy!
Ingredients
(For approximately 600ml marmalade)
700g apples, peeled and coarsely chopped
150ml water
2 handfuls of dates, pitted and chopped
Zest and juice of 1 lemon
1 heaped tsp cinnamon powder
Optional: A pinch of cardamom
Method
Combine all the ingredients in a pot and bring to the boil.
Lower the heat, cover and simmer for approximately 15 minutes or until the apples are soft.
Blend and set aside to cool down.
Sterilise some jars with boiling water.
Put the marmalade in the jars.
Store one in the fridge and freeze the rest.
The marmalade lasts for about 5 days in the fridge.
