Making pancakes with whole grains will add heart-healthy fibre to your diet. Add fresh fruit to top your pancakes to make a delicious breakfast full of vitamins and minerals; the perfect start to these fading summer days.
Buckwheat flour is a high fibre, high protein alternative to power up your morning. It is also higher in many essential vitamins and minerals when compared to white flour alternatives.

Gluten Free, Dairy free, Banana Lemon Pancakes
(Approximately 10 medium sized pancakes)
2-3 bananas
1 ½ tsp lemon juice
½ tsp lemon zest
3 eggs
250-300ml rice milk or other plant based milk
125g rice flour
75g buckwheat flour
A pinch of vanilla powder
A pinch of sea salt
½ tsp baking soda
Coconut oil for frying
Method
- In a mixing bowl mash the bananas with a fork.
- Add the eggs and whisk.
- Add lemon juice, lemon zest and milk alternative. Whisk.
- Add rice and buckwheat flours, vanilla powder and sea salt. Whisk to mix well.
- Add baking soda and turn softly.
- Drop ladles of the mix into a frying pan with a little coconut oil and fry on a medium heat.
Why use buckwheat flour?
Diets that contain buckwheat have been linked to lowered risk of developing high cholesterol and high blood pressure. Buckwheat’s beneficial effects are due in part to its rich supply of flavonoids, which protect against disease, and act as antioxidants. Buckwheat is also a good source of magnesium, improving blood flow and nutrient delivery while lowering blood pressure.
