Hope you’ve all been enjoying the summer weather and the opportunity to eat lots of light and fresh food. Here’s another summer recipe from the Azul kitchen for you to try. Let us know what you think!
Ingredients
- ½ lettuce head
- ½ grapefruit, chopped
- 1 pomegranate, peeled
- 1 apple, chopped
For the dressing:
- Juice of ½ grapefruit
- 2 tbsp extra virgin olive oil
- 1 tbsp honey
- Sea salt to taste
Directions
- Prepare the vegetables and fruit and combine in a salad bowl.
- Whisk the dressing, add to the salad and mix.
we’re in the cold, dark depths of winter here, but this is a keeper for the warmer months…fresh, zingy and gorgeous. I’ll probably have to follow it with chocolate to make up for it 😉
